Super Simple Summer Salad
This is a quick and delicious vegetarian summer salad and due to the relatively low amount of calories, a great and healthy breakfast or lunch recipe!
Ingredients (4 servings)
400 grams of lettuce
1 cucumber
2 avocados
400 grams of cherry tomatoes
2 buffalo mozzarellas
100 grams of assorted unsalted nuts
Olive oil
Ground black pepper
Steps
– Chop lettuce up in small leafs
– Chop cucumber in quarter slices
– Skin avocado and chop in quarter slices
– Chop mozzarella in quarter slices
– Chop cherry tomatoes in half
Put everything together on a plate and garnish with olive oil and ground black pepper to taste.
